HALDI (TURMERIC)

The thing which enhances the taste and texture of food is turmeric. Turmeric is another substance after the salt which is used in many of the dishes in the world. Turmeric has numerous health benefits. It has its own natural flavor. Turmeric powder has a warm, bitter, black pepper-like flavor and earthy, mustard-like aroma.

Haldi has many benefits, it is used in cosmatics, food, Ayurvedic medicine, dye,etc. It is used in many tredinational Indian, unani, Chinese medicine. Most turmeric is used in the form of rhizome powder to impart a golden yellow color. Rhizomes of haldi is used to make pickle compounds in haldi are called curcuminoids, the most important of which is curcumin.

Curcumin is being recognized and used worldwide in many different forms for multiple potential health benefits. For example, in India, turmeric—containing curcumin—has been used in curries; in Japan, it is served in tea; in Thailand, it is used in cosmetics; in China, it is used as a colorant; in Korea, it is served in drinks; in Malaysia, it is used as an antiseptic; in Pakistan, it is used as an anti-inflammatory agent; and in the United States, it is used in mustard sauce, cheese, butter, and chips, as a preservative and a coloring agent

Turmeric  has antibacterial, antiviral, antimicrobial, antiallergic, antifungal, antioxidant, anticancer, antiseptic, cardioprotective, hepatoprotective, nephroprotective, radioprotective, Wound healing and digestive activities.


It has different names in different languages Hindi Name(Haldi, Hardi),  English Name(Turmeric),  Marathi name(Halad),  Telugu Name(Pasupu, Pasupu Kommulu),  Tamil Name
(ManjalK),  Punjabi Name(Haldi, Haldar, Halaj),.  Bengali name  (Halud),  Gujrati name(Haladar),  Arabian name(Kumkum),  Malayalam name(Manjal)


Chemical constituents

  • Curcumene, Curcumenone, Curcone, Curdione, Cineole, Curzerenone, epiprocurcumenol, eugenol, Camphene, Camphor, Bornel, Procurcumadiol, Procurcumenol, Curcumins, unkonan A, B, & D, B- sitosterol etc.
  • Studies have shown that curcumin, the major phenolic compound present in turmeric.
  • In a standard form, turmeric contains moisture (>9%), curcumin (5–6.6%), extraneous matter (<0.5% by weight), mould (<3%), and volatile oils (<3.5%). Volatile oils include d-α-phellandrene, d-sabinene, cinol, borneol, zingiberene, and sesquiterpenes.
  • The components responsible for the aroma of turmeric are turmerone, arturmerone, and zingiberene. 
  • The rhizomes are also reported to contain four new polysaccharides-ukonans along with stigmasterole, β-sitosterole, cholesterol, and 2-hydroxymethyl anthraquinone.
  • The golden yellow color of turmeric is due to curcumin. It also contains an orange-colored volatile oil.
  • More than 100 components have been isolated from turmeric. The main component of the root is a volatile oil, containing turmerone, and there are other coloring agents called curcuminoids in turmeric. Curcuminoids consist of curcumin demethoxycurcumin, 5’-methoxycurcumin, and dihydrocurcumin, which are found to be natural antioxidants.
  • Nutritional analysis showed that 100 g of turmeric contains 390 kcal, 10 g total fat, 3 g saturated fat, 0 mg cholesterol, 0.2 g calcium, 0.26 g phosphorous, 10 mg sodium, 2500 mg potassium, 47.5 mg iron, 0.9 mg thiamine, 0.19 mg riboflavin, 4.8 mg niacin, 50 mg ascorbic acid, 69.9 g total carbohydrates, 21 g dietary fiber, 3 g sugars, and 8 g protein. Turmeric is also a good source of the ω-3 fatty acid and α-linolenic acid

 1. Provides Relief from Arthritis Pain :

Haldi consists of a compound known as Aromatic turmerone, which repairs damaged brain stem cells. Damage to these stem cells is responsible for a number of neurodegenerative disorders, such as Alzheimer’s and stroke. Daily consumption of turmeric can reduce the risk of developing these conditions, and improve memory.
Neurons are capable of forming new connections, but in certain areas of the brain they can also multiply and increase in number.One of the main drivers of this process is brain-derived neurotrophic factor (BDNF), which is a type of growth hormone that functions in your brain.Many common brain disorders have been linked to decreased levels of this hormone, including depression and Alzheimer's disease.             - Curcumin Anti-oxidant property in it  can  protect  lipids or hemoglobin from   oxidation. It can significantly inhibit  the  generation of reactive oxygen species  (ROS) such as H2O2, superoxide 
anions  and nitrite radical generation by activated macrophages. Its derivatives, bis-demethoxycurcumin and demethoxycurcumin also have antioxidant activities.

This bright yellow coloured spice is loaded with curcumin, an active compound that plays an important role in providing beauty and skin. Haldi is useful in mainly skin diseases such as

1) Lowers the scar: Add turmeric with 1 teaspoon of besan, apply it on the scars and pores. Allow it to dry for 15-20 minutes and wash off

2) Heals cracked heal: For cracked heal mix turmaric powder with milk and apply it on cracked heal. Wait for 15-20 minute and wash off

3) Skin whitening: Haldi removes suntan(brown color of skin due exposure to sun) which makes skin dark and dull. So it is an amazing herb for whitening
        Tip: Mix 1 tablespoon of turmeric powder, lemon juice and milk to make a thick paste and apply it to the affected area especially face, neck, elbows, etc. Let it tobe dry for 20 to 30 minutes and wash off with water

4) Removes acne and pimples: Take  teaspoon of turmeric alongwith
 2 teaspoons of sandalwood powder and milk to make a fine paste apply it all over your face and let it dry and wash off.


Uses, benefits and application

1) For eyes : Regular use of turmeric in diet is known to improve eye health and relieve allergic disorders related to eyes.
              - A cup of water, mixed with 2 pinches of turmeric is used for washing eyes to relieve itching.
              - Curcumin – one of the most important component of turmeric is used in eye drops to treat glaucoma.

2) Turmeric was used for long periods of time up to one year, to improve memory and concentration.

3) Turmeric can be used as part of food and also can be applied all over the body.

4) Turmeric makes a poor fabric dye, as it is not light fast, but is commonly used in Indian clothing, such as saris and Buddhist monks' robes. It is used to protect food products from sunlight

5) It has been used as a cosmetic and an important kitchen spice in India. It has also been a part of home remedies to combat cold, cough, seasonal disorders, infections, wounds, skin diseases etc. with this it also used to worship Gods and Goddesses in india.

6) Pitta dominant people may sometimes experience increased body heat with turmeric use. They can add a pinch of turmeric to a cup of milk and have it. Coldness of milk with balance out the excess hotness of turmeric.

7) Turmeric can tolerate heat. So, it is safe to make a herbal tea.

8) 2 pinches (1 gram) of turmeric, mixed with half a teaspoon of ghee (clarified butter) can be consumed daily, for Vata Dosha.
           
9) Haldi is one of the best detoxifying agent, due to high Anti-oxidant content.
              - It relieves the blocks in the cells and re-establishes their normal functioning. Once the blocks in the cells are removed free movement of nutrients into the cells and the elimination of toxins out of the cell takes place smoothly.

10) In Ayurvedic medicine, turmeric is a well-documented treatment for various respiratory conditions (e.g., asthma, bronchial hyperactivity, and allergy), as well as for liver disorders, anorexia, rheumatism, diabetic wounds, runny nose, cough, and sinusitis.
            - Liver is one of the important human organs, which play a major role in detoxification of xenobiotics. Various factors are responsible for the hepatic complications such as parasitic and viral infections, autoimmune diseases and intoxication with various xenobiotics including chlorinated solvents, alcohol, drugs, fungal toxins, industrial pollutants, and radioactive isotopes. In this vista, curcumin-based therapeutics for a liver disorder has been in use in different part of the world for a long time.
            - Respiratory disorder such as asthma, bronchitis, and cold coughs rapidly increasing worldwide due to the continuous increasing of environmental pollutants. Currently used drugs in this prospective are not a permanent solution and also causes other adverse complications. Curcumin shows a valuable role in the control of respiratory related complications.

11) In both Ayurvedic and traditional Chinese medicine, turmeric is considered a bitter digestive and a carminative. 
            - It can be incorporated into foods, including rice and bean dishes, to improve digestion and reduce gas and bloating. 

12) Unani practitioners also use turmeric to expel phlegm or kapha, as well as to open blood vessels in order to improve blood circulation.

13) Turmeric is one of the best pain relieving agent Which is used in many traditional ayurvedic medicine.
            - Nonsteroidal anti-inflammatory drugs are most commonly used drugs worldwide in the treatment of inflammation and are approved for orthopedic conditions and wound. However, such drugs show an adverse side effect and causes gastric ulcer. Curcumin have shown a vital effect in the prevention of inflammatory process via modulation or inhibition of various molecular pathways.
           - Curcumin, chief constituents of turmeric shows a role in the suppression of both acute and chronic inflammation as it block the formation of enzymes such as COX-2 involved in inflammation.

14) Turmeric also shows Neuroprotective effects but exact mechanism is not understood yet.

15) Allergic rhinitis : Add two pinches of turmeric to 4 teaspoons of ghee. Just before going out of your home, apply a very thin layer of this ghee turmeric mixture to the inner side of both noses (nostrils). 

         - Take a pinch of turmeric and add it to a cup of hot milk or water. Drink this on empty stomach in the morning. 
         - Add a some amount of turmeric powder over a hot pan and inhale the vapours coming out of it. This helps to reduce the inflammation of upper respiratory tract.


Note :  

1. It is used in chemical analysis as an indicator for acidity and alkalinity. The paper is yellow in acidic and neutral solutions and turns brown to reddish-brown in alkaline solutions, with transition between pH of 7.4 and 9.2.

2. Curcumin is poorly absorbed into the bloodstream. It helps to consume black pepper with it, which contains piperine, a natural substance that enhances the absorption of curcumin.

3. Curcuminn boosts levels of the brain hormone BDNF, which increases the growth of new neurons and fights various degenerative processes in your brain.

4. Curcuminn can cross the blood-brain barrier and has been shown to lead to various improvements in the pathological process of Alzheimer’s disease.

5. According to ayurveda, haldi is good for Kapha, vata, pitta
6.:Use turmeric daily to cure various skin related issues like ageing, sun tan, wrinkles, cracked feet and even to prevent hair loss and dandruff.

8. Turmeric shows promising results as an insect repellent and natural pest control ingredient.
    
9. Turmeric exerts cardio-protective  effects mainly by antioxidant activity,  lowering lipid peroxidation, anti-diabetic  activity  nd inhibiting platelet aggregation.   

10. India produces nearly all of the world’s turmeric crop and consumes 80% of it. With its inherent qualities and high content of the important bioactive compound curcumin, Indian turmeric is considered to be the best in the world.

11. Excess use of turmeric, especially during summer can cause increase in hotness. So avoid it's excess use in any season.

Turmeric Processing

Traditional method : 

Before turmeric can be used, the turmeric rhizomes must be processed. Rhizomes are boiled or steamed to remove the raw odor, gelatinize the starch, and produce a more uniformly colored product. In the traditional Indian process, rhizomes were placed in pans or earthenware filled with water and then covered with leaves and a layer of cow dung. The ammonia in the cow dung reacted with the turmeric to give the final product. For hygienic reasons, this method has been discouraged.

Present method :

In present-day processing, rhizomes are placed in shallow pans in large iron vats containing 0.05–0.1% alkaline water (e.g., solution of sodium bicarbonate). The rhizomes are then boiled for between 40–45 minutes. The rhizomes are removed from the water and dried in the sun immediately to prevent overcooking. The final moisture content should be between 8% and 10% (wet basis). When finger tapping of the rhizome produces a metallic sound, it is sufficiently dry. The dried rhizomes are polished to remove the rough surface. Sometimes, lead chromate is used to produce a better finish, but for obvious reasons this practice should be actively discouraged. The powder maintains its coloring properties indefinitely, although the flavor may diminish over time. Protecting the turmeric powder from sunlight retards the rate of deterioration.
